Insulated jackets are optional for temperature maintenance during mixing, while closed-top designs with airtight seals reduce oxidation of milk components.
2. Agitation System
Equipped with low-shear paddle or anchor stirrers (variable speed: 10–60 RPM) to gently mix ingredients without damaging milk fat globules or denaturing proteins—critical for maintaining product texture. Some high-end models add a homogenizing function to break down fat particles for a smoother consistency, suitable for milk beverages and cream products.
