PRODUCT DESCRIPTION
This is a commercial-scale, closed-loop fermentation system tailored for consistent batch production of kombucha, balancing microbial stability, flavor control, and operational efficiency.
1. 500L Fermentation Vessel
◦ Crafted from food-grade 316L stainless steel to resist the acidic environment of kombucha (pH 2.5–4.0) and prevent metal leaching.
◦ Designed with a sloped conical bottom for easy sediment (yeast/bacteria biomass) removal and full drainage; equipped with a large top manway for adding tea, sugar, and SCOBY (symbiotic culture of bacteria and yeast), plus a sight glass for real-time fermentation monitoring.
◦ Insulated jacket with temperature control coils to maintain the optimal fermentation range of 22–28°C (critical for acetic acid bacteria and yeast activity).
2. Gas Management System
◦ Fitted with a pressure relief valve and a one-way airlock to release excess CO₂ produced during fermentation while preventing outside contaminants (molds, unwanted bacteria) from entering.
◦ Optional CO₂ collection port for carbonating finished kombucha directly in the tank.
3. Filtration & Transfer Unit
◦ Multi-stage filtration setup: coarse mesh filter (to trap SCOBY and large particles) + fine cartridge filter (1–5μm) to produce clear kombucha; paired with a sanitary centrifugal pump for gentle transfer to bottling lines, avoiding SCOBY damage.
4. CIP (Clean-in-Place) Module
◦ Built-in spray balls that circulate sanitizing solutions (e.g., peracetic acid) to clean the tank interior, eliminating manual scrubbing and ensuring compliance with food safety standards for repeated batch use.
5. Control Panel
◦ Integrated PID temperature controller, timer, and pH monitoring port; allows programming of fermentation cycles and alerts for temperature/pressure deviations.
