1. Material & Corrosion Resistance: Constructed from food-grade 316L stainless steel to withstand the acidic nature of kombucha, prevent metal leaching, and ensure easy sanitization between batches.
2. Gentle Agitation System: Equipped with low-speed paddle stirrers or magnetic mixers to fully dissolve sugar in tea liquor without shearing the SCOBY or generating excessive foam, which could disrupt subsequent fermentation.
3. Temperature Regulation: Integrated insulated jackets or heating coils to maintain a stable pre-fermentation temperature (22–25°C), optimizing SCOBY activation and avoiding temperature shocks that hinder microbial activity.
4. Practical Fittings: Features large manways for SCOBY and raw material loading, sampling ports for checking sugar concentration, and bottom discharge valves with fine mesh screens to retain SCOBY while transferring the mixed liquor to fermentation tanks.
5. Hygienic Design: Smooth, seamless inner walls and CIP (Clean-in-Place) spray balls to eliminate residue buildup, reducing contamination risks and meeting food safety standards for commercial production.
